I've just made more Michele Foster's fondant than I need. How do I keep it? For how long?
It will keep at room temperature for at least a month. Just be sure it is well wrapped, and if you have colored it, place it in an opaque container.
If it will be a while before you need more, then freeze it. It will last well over a year in the freezer, again, if properly wrapped. I like storing mine in a large plastic tub or a fondant bucket.
