Salt In Oatmeal Cookies

I need to make oatmeal cookies for someone who is on a very low sodium diet. The recipe I have and have always used calls for salt and baking soda, which is very high in sodium. My question - What does salt do for the recipe? Would it be ok to leave it out or is there a good substitute? Or is there a low sodium recipe anyone knows of? Any help would be appreciated.

I never put salt in any "sweet" recipe .... cookie, cake, brownie, what have you. Haven't done it for years. Never.
