I need to make oatmeal cookies for someone who is on a very low sodium diet. The recipe I have and have always used calls for salt and baking soda, which is very high in sodium. My question - What does salt do for the recipe? Would it be ok to leave it out or is there a good substitute? Or is there a low sodium recipe anyone knows of? Any help would be appreciated.
I never put salt in any "sweet" recipe .... cookie, cake, brownie, what have you. Haven't done it for years. Never.
Quaker lists salt as optional in most of their oatmeal cookies. They also have several recipes under the low sodium category.
