Wrapped well, this fondant will keep for a long time. Do you want to know if you can store it in the fridge or put a cake covered with it in the fridge? It doesn't need to be stored in the fridge (condensation will make it sticky when you're trying to work with it unless you let it warm to room temp first). It can be frozen to maintain freshness. Again, just allow it to come to room temp, or zap in in the microwave for a VERY SHORT time/on low heat to defrost it. I always refrigerate my fondant covered cakes and Michele's recipe is what I always use.

It will be good for at least a month on the counter if wrapped well. The sugar and the cooking process helps to preserve the butter and milk. If you want to freeze it, it will be good for more than a year. It still needs to be well wrapped.
