my question is...if i put a light coating of simple syrup om my cakes will it make them unstable? can i brush a bit of syrup on the outside of the cake before frosting with butter cream? will is seep through the butter cream?

Nope... it's won't be a problem on either count. Remember you're not saturating the cake, just a light spray or brushing of the syrup.
