The buttercream I use crusts really well, so my question is...how can I paint it? can I use wilton gel colors?

I have a cake to make with a professional hockey logo on it...and I honestly don't want to do it out of icing if I don't have to.

Yes if you use a very soft brush.
I would mix the gel paste w/some vodka or other alcohol. That helps lighten the colors some.

I did a football helmet cake for my brother's Groom's Cake with the logo of his favorite tesm. I let the icing crust very well, then just lightly painted right from the jar of gel. It takes time and patience, but you Can do it. thumbs_up.gif
