Timeline And Icing Question

I'm making a cake nest week and this is the first one that I'm having to split up on days that I'm making it. Let me know how this sounds:

Monday: Bake cakes and make Michele Foster Fondant
Tuesday: I'm busy with other stuff so I don't have time to work on the cake
Wednesday: Fill, ice and decorate the cake
Thursday: Bring to work for the party

I "think" I'm making a chocolate cake with strawberry filling. Can I use chocolate buttercream underneath white fondant? I'm thinking not, but maybe? Will the cake be okay in the fridge for 3 days or should I freeze it?

Yes you can definitely use the chocolate buttercream under white fondant. Unless you roll your fondant superthin, it won't show through. I think your timeline sounds pretty good. Ideally, I like to have a day for the cake to settle after I fill/crumb coat it before I fondant and decorate, but as long as you let it rest for a little while in between you should be okay.

Ditto the settling time. If you bake on Monday, torte, wrap and freeze, all should go well. First thing Wednesday, pull it out, fill wrap and put a paperback book on top to let it sit and settle. Give it a few hours, ice and decorate.
