I'm looking for a nice, moist carrot cake recipe for diabetics. I've found a few online but I wondered if anyone had a recipe that they'd already tried and liked.

I also have to find a recipe for cream cheese icing that a diabetic can have.

This is for my dad, whose favorite cake is a Walmart carrot cake, so I'm not trying to imitate a gourmet cake here...just looking for something to make for him that he can eat without my mom saying he can only have a slice so small you can see through it icon_lol.gif

It came out wonderful. Although instead of coconut I subbed raisins. It was so moist and didn't have the sweetener after taste that a lot of the low sugar recipes have. As for the cream cheese frosting I used this one minus the maple flavoring. http://splenda.allrecipes.com/Recipe/Recipe.aspx?nprid=76266

I was also happy with this low-sugar cream cheese icing. It piped well. I found mixing the cream nd pudding together first, then whipping, prevented clumping. I did it on a tiered cake, and it held up well.
