I love them too! Whoever was the genius who invented them is my idol. If I make them, I have to keep like 10 and give the rest away, otherwise I will eat them all myself in a day or two.

i have a quick question on the cake truffles. i have made them several times but my chocolate seizes up after a few are made. how do you keep that from happening?i keep the chocolate warm the whole time. i have stopped making them because it just becomes a chore and is not fun. any help would be appreciated.thanks.....................laura

I saw an episode of Good Eats on truffles, and he used an ice cream scoop to dip out the chocolate and roll the centers around in. That might solve the problem--only a very small amount of chocolate would seize, but the majority would still be in the pot and untouched by moisture. You can wipe the scoop clean.

It was the kind of scoop with no scraper release things in it, to clarify, just the round bowl.
