Toba's Glace - New Needs Advice ?

Hey guys,
Wondering about Toba's Glace. Do you feel comfortable leaving this out in the summer? I am thinking of making a batch of sugar cookies today (Tuesday) to serve on Thursday. They will be air-conditioned the whole time. How long will they last? Is it safe to leave it out that long since it contains milk? What do you think? Do you do this?
Also, how do you use glace? Is it pipable?

The icing is perfectly safe to leave the iced cookies out.

In Toba's book it says that if you make it with water instead of milk it will last for a long time. Although, you are doing them only a couple of days head so, is perfectly ok.
