I am planning on using The Well Dressed Cake Swiss Meringue Buttercream and have a few questions. After decorating with it do I need to put the cupcakes in the fridge or can this icing sit out over night? If I do put it in the fridge do I need to let the BC come to room temperature before serving? What is the big taste difference between american BC and SMBC? Thank you for your answers!
you have to let it come to room temp after putting it in the fridge. SMBC gets hard when it gets cold and it doesn't taste as good (although some people like it cold, too, like me)
there's a big difference between the powder sugar and butter/shortening BC and SMBC is. i like SMBC more because it is creamy and fluffy and almost like ice cream.
