I've seen a lot of cakes with ganache oozing off the sides and I love the look. How do I do that?

Are you talking about the chocolate drizzle coming from the top edge? IF so, I use a double fudge or chocolate fudge icing, you put in microwave to warm up then put in a dec. bag and cut bottom off and just squeeze at edge, let run down to desired lenght and move around top edge of cake.

HOpe this is what you are looking for.

Good luck
