Cake Recipe For Milk Allergies

Hi everyone,

I am making four cakes for my niece and nephews. My sister has a soon to be 3 yr old and soon to be 1 yr old triplets. I have to make a cake for each one (per sister's request, not asking for much).

One of the babies has a milk allergy. He breaks out in hives if he has any milk products. He hasn't had eggs yet so we are not sure if he is allergic to that. How do I make a cake for him without milk, butter or eggs?

Any help would be appreciated.

Substitute oil for butter. Substitute water for milk. Or use a non-dairy product (like soy).
For filling you can do a fruit puree, but for the icing you are pretty much stuck with shortening, as far as I know.

Duncan Hines yellow cake mix (and others) are dairy and egg free. You can use an egg substitute. Be sure to check the labels.
