I'm working on a practice cake for OSSAS and made my first few batches of modelling chocolate using Toba Garrett's recipe - 1 lb. of chocolate to 5 oz. of corn syrup. The first couple of batches were fine. The second and third batches, I decided to double up and make 2 lbs. of chocolate to 10 oz. of corn syrup. The second batch was fine. The third batch was a lot runnier. But, I was tired and put it in the pan and covered to cure anyway. I just realized, after it's been in the fridge for an hour, that I only used 1 lb of chocolate to 10 oz. of corn syrup!!! icon_cry.gif

Does anyone know if I can still save this batch of modelling chocolate? Is there any way to incorporate another pound of chocolate?

So frustrated with myself. At the rate I'm going, this practice cake MIGHT be ready for OSSAS. thumbsdown.gif

Yes, you can gently re melt it and add the extra pound.
