I'm going to attempt a hat cake on top of a sheet cake for a lady that's retiring in my mother's office and am not real sure how to go about making the hat. I'm hoping that someone has some suggestions.

I have a red hat cake just like you described in my photos and is my avatar.

I baked a 4" round and froze it. While it was frozen I carved down the top to make it look like a dome hat shape. I iced it in buttercream and covered it in red fondant.

For the brim I rolled out some red fondant and cut a circle the size that I wanted. I laid it on a dinner plate and propped the edge up the side of the plate to give it a folded edge. Let it dry for about a day. Then I just put a smear of buttercream on the circle and placed the dome on it. I cut a purple strip of fondant and wrapped it around to cover where the dome and brim meet. I made a bow and glued it on the ribbon.
