My three tiers are assembled and covered in fondant. They are in the fridge for now.

My next step is to apply ribbon so I can pipe dots above it for the final decoration.

My question: Can I remove the fondant covered cakes from fridge, allow the condensation to dry, pipe the dots and then store them in the fridge overnight? I'm wondering if the dots (done with RI) will melt or slide off tomorrow when I remove the cakes and they start to sweat again. Should I apply dots then leave cakes out overnight? Leave them in the fridge overnight, remove early enough to allow them to dry up and pipe the dots mid-morning before a 2 p.m. delivery?

Anyone tried this?

Any and all advice much appreciated.

Anna

It would depend on the filling. Does it require refrigeration? If yes, wait until the morning

If it does not rqurie refrigeration, I would do it sooner and NOT re-refrigerate the royal cing dots
