I have a cookie order for a saturday. They will need to be shipped several states away. So I'm thinking I will need to have them mailed by wednesday. I work on friday and saturdays. So when can I start making them? If I make the cookies and freeze them. How does that work. What do I freeze them in? How do I thaw them? When can I make the royal icing? I'm still kind of new to this so I have lots of ?'s. Thanks.

Decorated sugar cookies keep for about a week if they're well wrapped so I would send them on a Monday to ensure they get there in time.

I've frozen cookies for several weeks after decorating, they don't bleed when they thaw. Just make sure they're well wrapped and they'll be fine.
