creme fraiche would probably do but you need whipping cream as well.

1 cup whipping cream
1 TBSP buttermilk

For crème fraîche, stir together cream and buttermilk, place in a plastic cup or bowl and cover with plastic wrap. Immerse cup or bowl in hot water, up to the level of the cream and store in a warm place (near oven, radiator) for 24 to 48 hours. You will know when itâs ready because you will see the thin-textured whey settled at the bottom. Chill before using, being sure not stir whey (the liquid that settles at the bottom) into crème fraîche (it will thin it out).

What are you making? I would say buttermilk, but if it's an extender (wasc) you will probably have to adjust your liquid amounts... Or you could just find a recipe calling for buttermilk and no sc icon_wink.gif

Warm cream cheese to almost liquid consistency, then add milk, a Tablespoon at a time, until you get the consistency of sour cream.

I've substituted mayo before and it was a WASC. No problems.

What about plain yogurt? I hear that works just as fine!
