I'm making a spice cake for my dad's birthday, but I wasn't sure what flavors of fillings would make his cake ROCK! lol It's such an odd flavor, I can't seam to come up with anything. All suggestions are welcomed and very much appreciated!! icon_biggrin.gif

Cream cheese is good. Another good filling is a really stiff apple butter. (I make one starting with dried apple rings, and it is soooo yummy!)

Cream cheese is always really good with spice cake but is kinda boring. A cubed apple filling is good or even pineapple. Caramel can be good too!

I have used an apple filling. Was able to get in a premade sleeve, so it is non perishable. Also cream cheese is great.

I like to make an apple pie filling sort of thing for spice cake. I just use the same filling for a pie, I just cut the apples smaller. I make it the day before I am going to use it so it has time to set up and thicken. You could torte your cake and alternate fillings, apple then cream cheese. Now I have to go make a cake! icon_biggrin.gif

I think orange would be good. I did a greek dessert, could spell it now, but it had a spice sauce and phyllo dough filled with an orange custard. Turned out pretty good. I am not a be spice cake fan, but this I would eat again.

I use the caramel - a can of sweetened condensed milk cooked on top of the stove to the consistency I want ~ adding a little bourbon would have to make it YUM!!
