Hello all...I'm in a little bind and need some advise.

I am in the middle of preparing a 1/2 sheet carrot cake. Customer ordered Cream Cheese (cc) frosting and filling. I have one sleeve of pre-made filling but know that I need two. Does anyone have a suggestion on how to "extend" the pre-made filling? (Getting another sleeve is not an option as we live too far away from the restaurant supply!)

TIA....

Kathy

Any chance you have Cr Ch or Cheesecake pudding mix? Instant pudding would work great.
If you are doing a 12x18 sheet seems to me one sleeve would be enough.
Do not mix w/b'creamicon_sad.gif Been there, tried that; made a mess. But I would try mixing it w/some whipped topping if you have that.

That's a great idea....didn't even think of that! I do have 2 pks of cheesecake pudding mix I can try.....do you think I should mix the two together, or just fill one 1/2 and then the other 1/2?

This is a 15x22 cake (2 11x15's put together) so that's why just one sleeve won't work.

Thanks so much for the help.

Kathy
