I need a purse cake similar in shape to the one in this link:

It needs to be 40 party servings, so what size should I begin with? And how many layers should it be? Three? Four? I'm confident in my sculpting abilities, but I'm not so confident in calculations the servings. Thank you

Use the Wilton party serving guide to give you an idea as to what size pan to use. Keep in mind you will lose a bit of cake in the carving process so you will need to a take that in to consideration.

As for the number of layers that's up to you to decide. You will need to consider how thick each individual layer is AND when stacked and carved do you have a proportionate height?

Hope that helps.
