To get chocolate fondant I add about a 1/4 a cup of cocoa powder (I like to use Hershey's dutch process cocoa for a dark rich brown) to the soupy marshmallow mixture. Then mix it with your powdered sugar like regular mmf except you won't need as much powdered sugar since the cocoa dries it out a little more. Just don't add melted chocolate because it does something to the the mixture and makes it crumbly.

Thanks girls! I like using the recipes on here, but I always like a recommendation on which one is best! Since you both agree on that one...that's the way I'll go. Thanks for all the help!

Now, why is there such variations in the measurements?

In the directions it says, "amount you choose to use depends on how strong chocolate flavor you want." The amount of the powder sugar will then vary based upon how much cocoa you add.
