Filling For Gingerbread Cake

Does anyone have any idea what I could use as a filling for a gingerbread cake?

There are two things I like with gingerbread. One is a lemon curd filling the other is a blueberry pie filling. I've even split the cake in 3 and filled with both. This tastes fantastic. Another good way is with a thick lemon sauce. You can poke holes in the cake with a wooden spoon and pour lemon sauce over it then you can icing it or put a glaze on it. mmmmmmmmm delicious lol

my daughter loves gingerbread... i had a recipe from food network , some years back.... it had me to make a lemon curd for the filling... it was really good.... there is a pudding.... can,t think of the name of it... i buy it all the time.... it is in little plastic cups... 6 of them... it is dulce de leche.... i think that would be wonderful too.... hth

Cream cheese filling is awesome.. as is lemon curd.. I know it sounds wierd, but it's really good. I'm going to have to try the blueberry.. that sounds intriguing.

Mmm, a cream cheese filling with the hard sauce for plum pudding folded in. YUM!

I agree, lemon is awesome. So is currant.

Never had blueberry with ginger cake either, will have to try!
