Help: Refridgerating Vs. Freezing Cakes

Hi,

Recenlty i have come across an issue when i try to make my cakes ahead of time. I DONT HAVE THE ENOUGH FREEZER SPACE! icon_sad.gif

If i wrap them same as i would if they were in the freezer (saran wrap and foil) how long can i keep them in the fridge.

If the event is on a saturday, i usually bake wed/thurs and then freeze, if i were to keep them in the fridge when should i bake them?

Freezers are meant to lock in moisture where a fridge will slowly pull out moisture. Unless absolutely necessary, I don't put my cakes in the fridge for this reason. For cakes due Saturday I bake on Thursday decorate Friday and deliver Saturday. I just make sure to wrap them well in saran wrap after they are baked and cooled. The cakes still are moist that Saturday.

DOH! Just realized you are probably asking about cupcakes since it's in the cupcake forum. icon_redface.gif
I try baking cupcakes the day before or I freeze but I have had some cupcakes stay fresh for days at room temp.
