I have a cake to do on Friday for my sisters work. She wants a 6 inch cake that is for a diabetic lady. I checked out the recipe for diabetic icing and found several. One calls for cream cheese but I don't really want to do a 6 inch cake and use 8oz of cream cheese in the recipe. I saw another one that calls for Dream whip and ff/sf pudding mix. Has anyone ever tried (tasted) either of these recipes? Do they taste good? I am using a regular choc cake mix for the cake since I read the icing is what normally "jumps" the blood sugar up. I hate to make icing that is going to taste like crap but don't want to bust her blood sugar either.

The cake as well as the icing cause blood sugars to spike in people like me who are diabetic. Its the carbs, including those from flour and sugar that cause the rise. Complex carbs cause a slower rise but including them in a cake is a recipe for disaster. When I bake, I use regular icing recipes, and just limit myself to a tiny taste.
