I made way too much cream cheese filling for a cake so I stuck it in the freezer. Is that okay? It's got cream cheese, butter, strawberries adn sugar. What do you think?
It should be fine, but sometimes cream cheese has a tendancy to separate. The rest of your ingredients should compensate.
Just be prepared when you thaw it, that it might not look quite the same.
I fixed my last batch by adding a bit more sifted powdered sugar and beating it with a wooden spoon. Since it was a filling, it didn't seem to show.
