Can I freeze a cake with a raspberry filling. Also one with Oreo bettercream and choc mousse. I have two large cake orders for this coming weekend and am strapped for time. I dont usually freeze my cake but I think I have to this time. Any advice will be greatly appreciated.
don't know about the bettercream, but last year I did 25 individual wedding cakes (filled with raspberry filling) for a wedding 170 miles from my home. Took a couple extras. with me to the wedding. We had two extra and since the bride didn't pay for them we kept them in a hotel room overnight, brought them back home and froze them. My partner ended up taking them with her on a camping trip to Canada. Left home with them frozen, in an ice chest. By the time they arrived at their destination they were still cold, so she let them thaw and she said everyone said they were delicious.
The cakes were white on white. I do not like to freeze decorated caked, since many of my flowers are fondant, and colors sometimes run.
