I am in desperate need in a good dairy free scratch cake recipe for a white cake or a yellow cake. i have been trying so many recipes out and none are working. anyone have a recipe for me??

Here is my basic white cake recipe. Replace the butter with shortening and the buttermilk with Rice Milk. Use about 1/4 cup less of the rice milk. I've used this many times for dairy free.

For your frosting, do the same, replace the butter (if you use it) with shortening, use the rice milk for the liquid (or non-dairy creamer), and add a bit more vanilla for a really nice flavor.

just a question, why would you replace the butter with shortening and not margarine? also could a non dairy creamer be used or only rice milk?

If I remember correctly, margarine usually has some milk or milk solids in it. So it would not be considered dairy fee.

The rice milk is just an option for a good tasting cake. Non-dairy creamer is another option and comes in a variety of flavors. Either one will work.

We use Fieshmans margarine for our daughters dairy allergy and I know there are a couple other margarines out there that are diary free. Just make sure you read your labels . icon_smile.gif

I would like to say that coffee creamers are lactose free not dairy free. Try coconut milk instead of milk or creamers.

does anyone have any other specific recipes? i've tried a bunch of recipes using those substitution and they don't taste good at all
