I am pretty new to this cake decorating thing. My boyfriend and I are trying to get a business up and running, but we understand that our cakes have to be unique and identifiable. We have been playing with recipes to find the perfect cake and icing, but so far we have not felt that "ah-hah" moment. We prefer to have a cake that is light and fluffy - although I am not sure if this is a good idea for decorating purposes. Also, we have been using a butter-cream icing recipe, but I do not think it is the best idea due to its melting ability and the high humidity climate we live in.
Does anyone have recipes that accommodate these preferences? Thanks.
