Hi,
Does anyone have any tried and true carrot cake recipes? I'm a newbie and in need of a good carrot cake recipe that will hold up to being 3 square tiered. Also, what kind of filler should I use along with outside frosting? Should I use marshmallow fondant or just plain icing. I did find a crusting cream cheese frosting recipe that I'm hoping will work well for decorating. I plan on doing some scrolling on the cake. I don't know, maybe i took on too much, but I'm determined to make this cake perfect, I just need your experience to help me. So please any suggestions would be helpful. Thank you! I have one from one of Dede Wilson's books that I love, and you don't hve to use the mixer. PM me and I'll send it to you either tomorrow or Wednesday.

I have one that is the best carrott cake I have ever seen. It's the recipe from Craker Barrell for their cake. If you would like it PM me and I will get it to you.
