I used to use the wilton's buttercream recipe. The last few cakes I have done I tried out a recipe from on here. Everyone seemed to like it better and I thought it was easier to use then the wilton's. It did better in the heat then wilton's, to. It is in the recipe section...called "High Humidity Buttercream". Good luck. HTH

Thanks I will check it out.

I just always seem to get too many bubbles. Does anyone know how to prevent that?

Don't use the whip on your KA mixer.. use the paddle. Or, if you do use the whip, make the icing a day ahead and then stir it down. I found this to be very good.
