I was in GFS on Saturday and saw "High Protein Flour". Is that a type of cake flour?

high protein flour is bread flour. Protein = gluten.
No, it's bread flour. It contains more gluten so it makes things chewier. Bad for cakes but I use it for cookies
Thanks. I should have know glutein = protein because I use the King Arthur's bread flour for my cookies instead of AP flour.
