Given the strength of the sugar arts in South America, I'm sure that there must be some pastry chefs who would be able to teach this. Perhaps you could contact some of the high end hotels or culinary schools in the capital city????
master cheffs here don t develope their techniques you are different so i really apreciate your help to grow day by day. For this reason, it was very hard for me to grow , i went to learn months ago after 26 years baking, trying and going , reading and making. It was a pity cause all is very expensive, and not all develope their secrets, and if they do , them are extremly nothing cheap al all.
