If I make a filling which has egg or milk, does the cake have to be put in the fridge? I have never done fillings and I am scared to if it cant be left out.

Depends on the recipes you use. icon_smile.gif

The sleeved pastry fillings come in a wide range of flavors and don't require refrigeration.

Info on the sleeved pastry fillings and a usage chart can be found on the first page of the following thread, "Everything you ever wanted to know about making your 1st tiered cake"

These are the two recipes I am considering. What do you think?

Carmel

1 cup packed brown sugar
1/4 teaspoon salt
6 tablespoons milk
3 cups powdered sugar

Strawberry buttercream
3 cups butter, room temperature
1 cup vegetable shortening
2 - 32 oz. bags 10X sugar (powdered sugar)
1/2 cup heavy whipping cream
1 over-flowing Tablespoon Creme Bouquet
Dash Salt
24 oz jar of Strawberry Preserves
