I dislike the heaviness of traditional buttercream icing. I tried the Swiss Meringue Buttercream and LOVED the taste. But I did find it a little to soft and droopy to pipe any sort of detail.

I've heard that the Italian Meringue Buttercream is light and fluffy like the SMBC but better for piping and you can even do roses with it. IF this is truly the case... Please share your favorite recipe!

I'm bound and determined to find the perfect (or at least in my opinion) icing for my cakes.

Thanks!!!

For chocolate I melt about 2 cups of semisweet chips and when it has cooled, don't want to melt the butter,I add it to the IMBC.SOOOO YUMMY!

None of the meringue based buttercreams crust. They don't have nearly enough sugar.

It does not crust and melts like crazy in the heat.
