I have been searching for a class on pulled sugar to no avail. Does anyone know if there are any classes in CT? I work in Hartford. Any info REALLY appreciated.
Pulled sugar is such a specialized field that it's unlikely you'll find formal classes in CT. I live in Cleveland and had to travel to Chicago and DC to take my classes.
I did the beginner & advanced classes at Wilton (wilton.com) in Chicago--super instructor, good value, wonderful experience. I recently took 6 days with Ewald Notter through Albert Uster to enhance my skills. You can see more from his school in Orlando at notterschool.com.
If you're a member of ICES, sometimes BKeith Ryder from Virginia does classes at days/weekends of sharing in various places. See ices.org
You may also be able to find something at the Institute of Culinary Education in NY or the Culinary Institute of America.
