I have a wedding cake consultation this evening and one of the requested flavors is WASC. I have one in the freezer marked 4/16. That means it's been frozen for almost 3 months. Is this okay to thaw and use, or do you think 3 months in the freezer is too long? How long should I keep cakes frozen before I toss them- 1 month, 2 months, 3 months?

Thanks for your help!
Rhonda

I would say if it's been wrapped very well you'd be fine. Is there a way you can taste test it after you defrost it?
