Chocolate Filling For Wedding Cake

I have a bride that wants chocolate cake, chocolate filling, and covered in white fondant. That's fine but my chocolate filling I am not to pleased with. It's run its course so to speak. I want something really good for her cake.
I have seen a lot of great recipes in the files but could you guys recommend one. I know they are all great but I need pointed in the right direction. I have received so many great tips from here, so point me and I will go LOL icon_biggrin.gif

I agree with Kitagrl whipped ganache would be wonderful in a chocolate cake. Good luck

a nice homemade hot fudge filling.

I used to work in a bakery that had this in a chocolate cake and it was amazing!

Here's a recipe I got off the Godiva website. I didn't like the cake recipe but the filling was wonderful.

6 oz of dark chcoloate finely chopped
1 cup heavy cream
1 stick butter
3/4 cup sugar

Place cream, butter and sugar in medium saucepan and cook over medium-low heat, stirring, until the butter melts and the sugar dissolves. Increase heat and cook until just before the mixture comes to a boil. Remove from heat and pour hot mixture over chopped chocolate. Let stand for 3 minutes to melt the chocolate. Stir gently until smooth and well blended. Refrigerate until cold and firm, at least 6 hours

i love the hersheys perfectly chocolate chocolate frosting. its so yummy!!
"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING

1 stick (1/2 cup) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Hands down my all time favorite. Can't be beat. Nostalgiac fave.

You can pipe roses or rosebuds and let them crust and make great candy too.
