I'm going to be making 2" mini cakes with my new Silverwood pan (woohoo). Do you all normally tort these minis?

Thanks,

Vonda

I read about people torting theirs but I don't usually. Also I have 2" pans but when I make minis I bake short sheet cakes and use graduated cookie cutters to cut out different sizes to stack up. I do recommend that you cut them frozen for best results.

On my last mini cakes I didn't want to mess with all of that extra work so I decided to try injecting the filling into the cake. I used a round tip and stuck it into 3 sides of the cake. The only thing I didn't like about it is it didn't go into the cake as much as I thought it was going. Someone on CC said there was an injector by Wilton that may get it into the cake deeper. Anyway, for the size of the cake it worked out okay, about every few bites you would get a nice lemony one...yum.
