I'm making 4 inch crosses for a Baptism and the NFSC is breaking before I get them on my cooling rack. I just made a dozen and about half of them broke! What am I doing wrong? it's not humid here today and I tried baking the second batch longer.

how long are you baking them? are you trying to move them off the baking sheet to the cooling rack before they've completely cooled? they're fragile when they're right out of the oven.

I'm baking them about 10 minutes. I thought you were supposed to let them cool on the baking rack? Am I supposed to let them cool completely on the sheet? Won't they stick?

I always let mine set and harden a bit before moving them to the cooling rack. Especially if they have sticks in them. Are you cooking on parchment paper? They won't stick to the paper. HTH
