My first wedding cake is due on Saturday. I have baked my cakes they are in the freezer for 2 days. I have my gumpaste roses and leaves done.
Should I defrost cakes tonight and start frosting and filling tomorrow or should I wait until thursday? I am doing all BC with some dots on the side and roses on the tiers. I am just so afraid that if I wait too long I will run into problems then I will be up all night on Friday trying to redo something. What do you think?

I would say wait and start decorating Thursday. I think it will still give you enough time for corrections and will keep the cake still fresh.
