I just tried the Vanilla Butter cake recipe listed on cc, from the Mermaid Bakery, and I just loved it. I have been disappointed so many times with scratch vanilla cakes, but I really liked this one. The only problem I had was the middle sunk, not sure what I did wrong. My baking powder is pretty old, so maybe thats it. Also for the liquid I changed it from milk to a flavored coffee creamer, it tastes so good, it has a really nice crumb, slices really nice, and I also did a amaretto sugar syrup to keep it from drying out. I have to say I am thrilled.

The liquid coffee creamers contain either corn syrup or sugar.

Substituting the non-dairy creamer for all the milk unbalanced the recipe resulting in a cake that fell upon cooling. icon_sad.gif
