Hi! If I have a ganache covered cake, can I attach gumpaste roses and then put the cake in the fridge overnight with the roses still on it? Or will the roses sweat? I've never covered a cake with ganache before so I'm not sure what will happen, also what should I use as the 'glue' for the roses? Thanks.
Personally I would not. By putting them in the fridge they could pick up moisture, which will soften the gumpaste. They could also sweat when they come out also causing moisture.
I once made a german chocolate cake for my mother and had put it in a cake carrier with gumpaste roses on top. They wlited in less than a few hours from the moisture in the icing. From then on I either make it so I can leave the cake out, or I put them on last minute.
