Baking Cakes Today - When To Crumb Coat/ice?

This is a cake to be finished for Saturday. I am baking the cakes today. Should I wrap and refrigerate until tonight or tomorrow? What's the best time to do the crumb coating and icing? Thanks for your help, this is my first "real" cake for someone other than immediate family!

I crumb coat my cakes when they're cool. And then ice them. I leave them unrefrigerated for up to 2 days. They're usually put in a cake box. I've never had any trouble this way.

If I bake the cake today, I would fill it and wrap it and leave it over night. Then I would crumb coat it tomorrow morning and leave it for a while and cover it with fondant. I wouldn't normaly put my cakes in the fridge. Ones the cake is decorated and finished, I put it in the box.
