I have a cake due that has pineapple sleeve filling, should I store it in the fridge overnight or can I leave it at room temp? Normally I leave it at room temp, but since it's such a large cake I had to start work on it early. The cake is filled and crumb coated, I will ice and decorate tomorrow.
I'm always concerned about making someone sick so, even if the cake doesn't need to be refrigerated I keep it in the fridge, but that's just me, plus here in Ca. is really hot right now, even if I wanted to leave the cake out the BC would melt.

I have never used the sleeve fillings, but aren't they normally not refridgerated when purchased? if so I would think it would be ok to leave out. HTH
It's pretty warm and humid here, the cake is not due until Thursday. I was afraid to leave it out that long.
