When you do topsy turvy cakes or sculptured cakes do you use l inch pans or do you use 2 inch. All my pans are 2 inch. How do you get the stacked cakes I see on food tv network challenges or ace of cake?

I did not want to know how to make the cake I wanted to know about when you make those type of cakes do you use 1 " or 2" pans and how many?
