Can I freeze a cake today Tues. to use for the weekend? Do I crumb it before freezing and do I thaw it all the way before decorating it? Also, if I make fondant decorations, can I refrigerate them until I am ready to use them in a couple of days.

I freeze cakes all the time, but I don't crumb coat first. I freeze it wrapped in plastic wrap. This is my time line. Take out of freezer on thursday night, crumb coat, put in fridge to thaw slowly. Take out friday and frost then decorate. If you want to keep fondant decorations soft you can make them and put in tupperware container to keep soft or keep them wrapped well in a baggy or something to keep air off them. Or if it doesn't matter if they are soft or hard, you can just leave them out. I usually put them on a cookie sheet lined with wax paper. I don't put them in fridge. But thats what I do.
