I have a request for a carved manatee cake for a wedding rehearsal dinner. I will have to travel four hours or so to get to the wedding, so I was wondering if anyone had suggestions for how to set this up. I am worried about the cake settling and wrinking the fondant. Would modeling chocolate help? I have seen Duff using modeling chocolate and then fondant on TV. This would be my first sculpted cake for a part of the wedding celebration, so I would welcome any advice on things to watch out for and any helpful hints.
