I got the Whimsical Bakehouse book from the library this weekend and just had a question....when using 2 pans, the recipes instruct you to use less batter in one pan and the majority of batter in the other...ie: for 9 cups of batter, put 3 1/2 cups in one pan and the rest in another....my question is ....why?? Am I missing something super simple??

It would be my guess, that you torte the larger layer, so you end up with 3 cake layers.
