Filling Suggestions???

I have my final cake decorating course on Wed (fondant/gumpast) and need some suggestions on non-perishable fillings. all my other cakes had pudding because it didn't need to be refrigerated but i wanted to try something different for my final cake.

I'm a pretty basic gal (i.e. picky icon_rolleyes.gif ). Not too into the fruity stuff (unless it's a good strawberry recipe). The cake is yellow cake. Any suggestions for a really easy recipe that can sit out of the fridge?

Chocolate ganache is very toothsome and can be left out for several days. icon_smile.gif
