...a good pineapple filling that won't melt in the June heat? I have a bride that wants a Sour Cream cake with a pineapple filling. The cake is due in two weeks, and it will be an outside wedding. I'm looking for a pineapple filling basically that won't need to be refrigerated and will stand up to stacking. (It's a 3 tier stacked design.)

I would use the strawberry butter cream recipe on the recipe site and substitute pineapple preserves for the strawberry preserves. It will hold up well in heat and tastes delicious! I could eat it just by itself.

lutie, if you enjoy preserves and b/c you might really like using "icing fruit":

Thanks! Do you think I could get them by the 24th if I ordered them today? That's only ten days. I think I may be stuck just making something instead of ordering it.
